In my previous life, we ate Quaker instant, flavored, sugared oatmeal in the packets. I knowwwww.
Transitioning to plain oatmeal with healthy ingredients was just that: A slow, and painful transition.
Now, I have a go-to recipe that literally takes MINUTES to prepare and everyone loves.
Soaked Rolled Oatmeal
Bulk organic rolled oats (I buy mine from my local health food store)
Filtered water
1 tbs whey (or lemon juice)
Pinch of sea salt
1/4 - 1/2 cup Raw milk
Butter to taste
Cinnamon to taste
Frozen blueberries to taste
1 tsp Blackstrap molasses
Maple syrup to taste
Ingredients I sneak in...{shhhhh} Coconut oil, kelp granules, ground flax seed, spirulina
Keep in mind that this recipe is all about preference. I give you the ingredients, you play around with them until you get it the way you like it.
- Measure out (or eyeball it like me) the amount of oats you'd like to use and cover them with an inch of water and 1 tbs of whey in a glass bowl the night before. Cover and allow to soak all night.
- In the morning, strain out the oats and rinse thoroughly. Put in a stainless steel pot and again, barely cover with filtered water. Add pinch of salt and cinnamon to taste (we like it fairly heavy).
- Bring to a boil, then reduce to simmer until the water cooks down. At this point, you can either add more water or add milk to achieve a level of creaminess. I use milk, and add 1/4-1/2 cup, depending on the amount of oats. Allow to BARELY simmer until oatmeal is cooked down to a consistency everyone is happy with. Also throw in a tsp of molasses at this point for extra nutrition! Stir often during this phase.
- I put the frozen blueberries into individual bowls along with a pat of butter (that cools the oatmeal quickly for my wee ones). Add oatmeal and top with maple syrup and another shake of cinnamon. Stir and serve!
Coming soon... a crockpot steel-cut oats version. Still working on some ideas!

Yum! We never ever buy the "other" oatmeal either although we do buy the cans of Quaker regular oats. We love a little cinnamon with some brown sugar mixed in. Will have to add flax seed too!
ReplyDeleteThanks for stopping by Melissa. If you ever try the organic rolled oats, you will notice a distinct improvement in taste. I buy Quaker to keep on hand for emergencies, but the kids notice the difference!
ReplyDeleteTry adding even a teaspoon of coconut oil - provides lauric acid and healthy saturated fats (aka BRAIN FOOD). They'll never know it's in there.
We use to eat oatmeal every morning. We need to get back in the habit. Thanks for ideas of different ways to serve it.
